Tasty Tuesday <3

Good Morning Beautiful Beings, 

        Welcome back to "Tina Talks Tuesday", I hope all is healthy and well in your world! :D It's been awhile since I shared a tasty recipe, so today is the day. :D Rain is falling, sun is shining, gardens are growing, and vegetables are in abundance at farmers markets all around. So get out and fill your baskets with gifts from Mother Earth and get to cooking up a Healthy meal! Enjoy!

Fresh Vegetables with Red Pesto:

1/2 lb new potatoes

1/2 lb carrots

6 oz (medium) Zucchini

8 Shallots

3 oz Asparagus Spears

3 oz Green Beans

For the Pesto:

2 tomatoes

Handful of fresh Basil

2 Cloves Garlic

2 oz Hemp seeds

1 Tablespoon Avocado Oil

~Bring a pan of salted water to a boil & cook the potatoes for up to 15 min., until tender. Trim the remaining vegs and chop into bite-size pieces, then steam them for 10 minutes, until tender. 

~To make the pesto, coarsely chop the tomatoes and basil. Peel and crush the garlic. Put all the ingredients into a food processor, and process to a coarse paste. 

~Toss the cooked vegetables with the pesto and serve immediately. (serves 4)
